A FAVOURITE SRI LANKAN MEAL

One of my favourite meals is

KIRI BATH (Milk Rice) a delicious cold rice dish for special occasions I love it with dhal (lentil) curry and sambol or chutney

Servings 4

INGREDIENTS

2 cups of raw white rice

3 cups water

2 cups of thick coconut made with coconut milk powder

Salt

Method

Boil rice in 3 cups water until well softened.

Add salt to the coconut milk

Add to boiled rice mix and cook in low heat until milk finely coats the rice

Pour mix in dish, flatten with a spoon, leave to chill and serve
